No Bake Stuffed Peppers

Sometimes, I come across a really great recipe using what we have available here in Dominica.  Tonight's is No Bake Stuffed Peppers because there are some beautiful peppers on the island, but using the oven involves heating up the house!

No Baked Stuffed Peppers

  • 2 medium bell peppers
  • 1/2 teaspoon basil
  • 1 15 ounce can tomato sauce
  • 1 pound lean ground beef
  • 1 small onion, diced
  • 2 cups rice, cooked
  • 1/2 cup grated cheddar cheese
  • salt to taste
  • 2 garlic cloves, minced
Cut peppers in half lengthwise. Bring a large pot of salted water to a boil, drop peppers in and boil for 5-6 minutes. In a small bowl, mix tomato sauce, and basil and set aside. Brown meat and onion in a large skillet. I added the garlic for just a few seconds at the end to prevent it from burning. Drain the meat. Stir in 1/2 the tomato sauce, 1/2 cup of the rice and the salt. Cover and simmer for 5 minutes; stir in the cheese. Spoon meat mixture into peppers and place into skillet. Pour remaining tomato sauce around peppers; cover and simmer. Top with additional cheese if desired. Serve on top of remaining rice.

Keeping Faith by Jodi Picoult


Picoult novels never disappoint me.  In this book, issues of divorce, affair, and stigmata take center stage on trial.  I love how Picoult moves from first person to third person seamlessly, even within chapters.  This story kept and held my attention the whole way through.  I'm now only sad that I don't have any more Picoult novels here on the island to read!

Font-a-licious!

My absolute favorite place to get free fonts is kevinandamanda.com.  They have incredible handwriting fonts and scrapbooking fonts.  She will even make your handwriting into a font, for free!  Installing fonts is super easy, and something you shouldn't be afraid of.  Here are some directions.  My next step is going to be change the fonts for my blog titles, which Amanda gives instructions for here.  And last but not least, here are some of the fonts I downloaded today.

Mall-less in Dominica

I miss shopping.  The joy of wandering around the mall on a Sunday afternoon.  Buying things because I want them, not because I need them.  Buying anything pretty.  If I were in the states, I would have taken Chris to see these things in the days leading up to Valentine's Day in hopes of receiving something special.

Immigration

After all the hassle from the immigration folks last semester, our immigration interview was actually a piece of cake. Or Pineapple Pie, whatever floats your boat.  Doesn't this look amazing?  It's like lemon-meringue but pineapple!  If I can find a pre-made pie crust in Roseau I'm so going to try this.
